My favorite line: “There’s a completely different sensation with raw milk Camembert,” Mr. Boddaert said. “A different odor, a different taste, a different color. Industrial Camembert is a horror, a horror!” -- ("The horror, the horror!" is from Joseph Conrad's Heart of Darkness, one of my all time favorite books. That this guy likens industrialized cheese to the savagery of the human condition is humorous to me.)

“Purchasing real (raw) milk at stores and directly from farmers is against the law in many states in America. Cow share programs provide a legal way of obtaining real milk. In a cow share program, a consumer purchases a share or shares in a dairy cow. Since the consumer is now a partial owner of the cow, he is entitled by law to the raw products that come from that cow. The consumer then pays the farmer a fee to take care of the cow (boarding, feeding, cleaning, etc.) The consumer does not pay for the milk or any other products that are obtained from the cow; they belong to him as partial owner.”
Increasingly, people want real milk, and cowshares is one way to get it. Camambert with real milk would be luscious!
