This recipe is great because it is easily halved to make enough for two people. I recommend using vegetable oil on the cast-iron pan because it doesn't burn as easily as butter but if you can get the butter to work without scorching, the taste is fantastic. And yes, we recommend bacon. Lots and lots o' bacon.
Ingredients:
2 cups flour
2 tablespoons sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
pinch ground nutmeg
2 eggs
2 cups buttermilk
4 tablespoons butter, melted
1 cup fresh or frozen blueberries
Directions:
Sift flour, sugar, baking powder, baking soda, salt, and nutmeg in a large bowl. Whisk eggs in a medium bowl until frothy. Add buttermilk to eggs and mix well. Add buttermilk mixture to flour mixture and stir to combine. Stir in melted butter.
Heat a large cast-iron skillet over medium heat, grease skillet with vegetable oil (or butter if preferred). Make 2-3 pancakes at a time by ladling 1/3 cup batter for each pancake onto skillet. Scatter some blueberries on top of each pancake and cook until bubbles form on tops of pancakes and bottoms turn golden, 2-3 minutes. Flip pancakes and continuing cooking until bottoms are golden and centers are cooked through, about 2 minutes more. Repeat until all batter is used, greasing skillet as necessary. Serve pancakes with maple syrup and cooked bacon, if you like.
Makes 12-14 pancakes

I give you credit. I love love love cooking and baking, but I have never made pancakes from scratch.
could be because once when I was living in seattle and just started dating troy that I tried to make pancakes, RAN OUT of mix, so added flour and vanilla to make up for it. not that there's anythign wrong with pancakes tasting like vanilla paper plates.. but yeah.. I've been gun-shy ever since.
these sound very good, though. maybe I'll try it out some day.
These look yummers. If you don't halve it you can have pancakes two days in a row! Or for dinner, a personal fave.
I've had my share of bad pancake experiences. I wouldn't dare try to make these using any other burner or pan because I'm superstitious that way and now think the only reason I've been successful making them is because I use the same instruments all of the time. But, should you venture forth into the pancake-making arena again, this recipe is pretty easy and tastes pretty good. (The nutmeg gives it a unique flavor.)
"Vanilla paper plates" are better than plain paper plates. ;)
