oven-roasted salmon
broccoli
strawberries
This was last night's meal but since Wednesdays are wordless this year, I am posting the info today. Darr commented that I'm approaching being a vegetarian like a meat eater. I think he might be onto something. At the recommendation of a decade plus vegetarian, I picked up faux chicken nuggets for lunch today. Clearly, things are getting desperate.

As a long-term veg, I give folks the same advice. Especially those who are attempting to integrate faux meat or dairy. You can't evaluate them compared to the original, you've got to just give em a try and see if you like them. Soy yogurt will never be creamy like dairy based yogurt but it's still pretty tasty.
Have you tried roasted chickpeas? They're awesome in tacos!
Good luck on the chick'n nuggets. Even my decidedly omnivore hubby likes Morningstar Farm chicken nuggets.
We love the morningstar farms chix patties, and the "corn dogs".
It's kind of hard for a meat eater to approach being vegetarian in another way, right? baby steps.
If you every need a meal out (lunch or dinner), I highly recommend Veggie Grill (there's on in Beaverton and one downtown Portland) and Native Cafe (Bridgeport Village). Native Cafe also has a cookbook.
