Recipe Corner: AHA Fudgy Buttermilk Brownies

These brownies I will probably not make again. The frosting made them slightly better but they have a weird flavor. This may be because I used my homemade applesauce made from Tokyo Rose apples. The positives are they are cakey, fairly moist, and, with frosting, can satisfy your chocolate cravings. If anyone gives the recipe a try, I'd love to hear about your results.

Ingredients
Brownies
1 cup all-purpose flour
1 cup firmly packed light brown sugar
1/3 cup unsweetened cocoa powder
1/2 tsp baking soda
1/4 tsp salt
2 large egg whites
1/2 cup unsweetened applesauce
1/2 cup low-fat buttermilk
2 tsp vanilla extract

Frosting
1 1/2 cups confectioners' sugar
1/4 cup unsweetened cocoa powder
1 tsp vanilla extract
2 to 3 tbls fat-free milk

Directions
Preheat the oven to 350˚F. Lightly spray a 9-inch square baking pan with cooking spray.

In a medium bowl, stir together the flour, brown sugar, 1/3 cup cocoa powder, baking soda, and salt.

In a small bowl, lightly whisk the egg whites.

Whisk the applesauce, buttermilk, and vanilla into the egg whites. Whisk into the flour mixture until well blended. Pour into the baking pan.

Bake for 30 minutes, or until a wooden toothpick inserted in the center comes out clean. Transfer to a cooling rack and let cool in pan.

In a small bowl, stir together the confectioners' sugar and remaining 1/4 cocoa powder.

Stir in vanilla, then gradually stir in the milk until the frosting is spreading consistency. Spread over the cooled brownies. Cut into squares.

Outcome: Hen likes them. Darr and I both find the weird flavor off-putting.
