Orange confit

Darr made orange confit (a.k.a. candied orange) after catching this video at the NY Times site. It is a simple process but takes 24 hours of simmering before it is complete. When finished, the orange is sugar. And yes, you eat the rind. There is not a trace of bitterness to be found.
